A new wave of sweetness is sweeping through the Riviera. Starting summer 2025, renowned pastry chef Cédric Grolet officially arrives at Hôtel de Paris Monte-Carlo, launching a new tearoom and boutique in the heart of the legendary palace. Nestled in the elegant patio of the hotel, this refined space adds a new chapter to the world-class culinary offering of the most Michelin-starred resort on the planet, under the Monte-Carlo Société des Bains de Mer Group.
After enchanting Paris, London, Saint-Tropez, Val d’Isère, and Singapore, Grolet makes his Monaco debut with a distinctive creative vision. In partnership with the Monte-Carlo SBM Group, he has also been appointed Executive Pastry Chef of Hôtel de Paris Monte-Carlo, taking charge of all sweet creations throughout the property—except for Le Louis XV – Alain Ducasse.
Named Best Pastry Chef in the World by The World’s 50 Best Restaurants in 2018, Grolet brings to Monte Carlo his signature style—where French technique meets sculptural artistry in fruit- and flower-shaped desserts that blur the line between food and art.
“His arrival further reinforces our Resort’s position as a global destination for the art of living and fine dining,” said Albert Manzone, CEO of Monte-Carlo SBM.
“Cédric Grolet Monte-Carlo” will be an intimate and elegant spot, open from breakfast to late afternoon. Mornings will feature fresh, vibrant offerings like açaï bowls, avocado toast, French toast, and gourmet pancakes. At lunch, guests can enjoy savory dishes like the club sandwich, truffled ham baguette, or the signature Cedric Grolet salad. And in the afternoon, the tearoom will fully embrace the ritual of tea time, with iconic sweet and savory creations such as Fleur Citron, Mangue, Diamant Framboise, and Cacahuète, alongside exclusive new desserts.
Next to the tearoom, a boutique will allow guests to take a piece of the experience home. From trompe-l’œil desserts and sharing cakes to cookies and seasonal specialties created exclusively for Monaco, each treat will reflect the Chef’s ever-evolving inspiration.
“I’ve known Cédric since 2013. He reinvents the codes of pastry with a contemporary and often extraordinary vision,” says Alain Ducasse. “His presence in Monaco is a testament to Hôtel de Paris’ commitment to high-quality, innovative gastronomy.”
To celebrate this new chapter, Cédric Grolet will unveil an exclusive creation dedicated to H.S.H. Prince Albert II. The unique pastry will be revealed at the summer inauguration of the boutique and tearoom.
“Monaco reflects the precision and excellence I strive for every day,” said Grolet. “Hôtel de Paris Monte-Carlo embodies everything I believe in. This is the reward of 25 years of passion and dedication.”
