Elle est baign\u00e9e par la mer Ligure, mais borde uniquement la France, c&rsquo;est pour cette raison que la cuisine mon\u00e9gasque se caract\u00e9rise par divers plats \u00e0 base de poisson et ressemble beaucoup \u00e0 la cuisine fran\u00e7aise. Parmi les plats typiques se trouve le \u00ab\u00a0Stocafi\u00a0\u00bb: stockfish cuit au vin, sauce tomate parfum\u00e9e aux herbes et \u00e0 l&rsquo;ail, servi avec des olives noires. Le stockfish est tr\u00e8s digeste et convient \u00e0 tout r\u00e9gime alimentaire ; faible en gras, il est riche en prot\u00e9ines, vitamines et sels min\u00e9raux. Placez les morceaux dans une po\u00eale antiadh\u00e9sive pr\u00e9chauff\u00e9e avec de l&rsquo;huile d&rsquo;olive (environ 4 cuill\u00e8res \u00e0 soupe) jusqu&rsquo;\u00e0 ce qu&rsquo;ils soient dor\u00e9s. Dans une autre po\u00eale, faire revenir l&rsquo;oignon hach\u00e9, l&rsquo;ail et le piment. Apr\u00e8s env. Apr\u00e8s 5 minutes de cuisson, ajoutez le vin blanc. D\u00e8s que le vin commence \u00e0 s&rsquo;\u00e9vaporer, ajoutez la tomate. \u00c0 feu doux, poursuivez la cuisson en ajoutant dans la po\u00eale le stockfish, le sel et les herbes. Couvrir la casserole avec un couvercle et cuire mod\u00e9r\u00e9ment pendant env. 45 minutes. Ajoutez ensuite le poivron, les olives et les c\u00e2pres et laissez cuire lentement encore 15 minutes. Pendant la cuisson la cocotte doit toujours rester liquide, si elle commence \u00e0 s\u00e9cher, ajoutez un peu d&rsquo;eau en cours de cuisson. Servir, ajouter un peu de poivre noir et deux grains de gros sel.
