Juste au-del\u00e0 de notre fronti\u00e8re, \u00e0 Menton, au 30 avenue Aristide-Briand, le chef argentin Mauro Colagreco dirige le \u00ab\u00a0Mirazur<\/strong>,\u00a0\u00bb avec une superbe vue\u2014comme le nom l\u2019indique\u2014sur la M\u00e9diterran\u00e9e. Ce restaurant est fier de ses trois \u00e9toiles. La particularit\u00e9 du menu, qui change constamment, est qu\u2019il suit le calendrier lunaire, avec des ingr\u00e9dients r\u00e9colt\u00e9s et des plats pr\u00e9par\u00e9s selon les phases lunaires, une pratique ancienne reprise par les partisans de l\u2019agriculture biodynamique. Excellentes options de poisson, fruits de mer et viande. Parmi les services, on trouve la climatisation, des plats v\u00e9g\u00e9tariens, et des installations pour les personnes en situation de handicap.<\/p>\n

\u00ab\u00a0La Ch\u00e8vre d\u2019Or<\/strong>\u00a0\u00bb (Rue du Barri) est situ\u00e9e \u00e0 \u00c8ze, un charmant village m\u00e9di\u00e9val en hauteur entre Monaco et Nice. Elle est r\u00e9compens\u00e9e de deux \u00e9toiles et se distingue par sa technique culinaire magistrale : sauces riches et intenses, dressage stylis\u00e9. Cette cuisine propose des plats int\u00e9ressants en alternant des notes de l\u00e9gumes, herbes et fruits de mer ; rougets m\u00e9diterran\u00e9ens, crevettes grill\u00e9es et basilic ; tomates cerises, melon vert, myrte et eau de pourpier d\u2019\u00e9t\u00e9 ; sardines, fenouil marin, nuances de vert. Ce lieu dispose \u00e9galement de la climatisation, de services d\u2019accessibilit\u00e9 et d\u2019une vue imprenable.<\/p>\n

Cuisine raffin\u00e9e et quelque peu audacieuse, qui sait marier saveurs m\u00e9diterran\u00e9ennes et exotiques. Par exemple, la rascasse ni\u00e7oise se m\u00eale \u00e0 un bouillon de poisson enrichi de vadouvan, un m\u00e9lange aromatique d’\u00e9pices indiennes. Le r\u00e9sultat est insolite mais gratifiant. Climatisation, accessibilit\u00e9 et une carte des vins particuli\u00e8rement s\u00e9lectionn\u00e9e sont disponibles.<\/p>\n

La modernit\u00e9 du d\u00e9cor se marie avec celle de la gastronomie pour cr\u00e9er une cuisine innovante, cr\u00e9ative et \u00e9l\u00e9gamment pr\u00e9sent\u00e9e, utilisant des produits de premi\u00e8re qualit\u00e9 venant de Nice et de la M\u00e9diterran\u00e9e (crevettes de San Remo, courgettes trompette, crabe vert local, calamars et agrumes). En plus de la climatisation, un menu v\u00e9g\u00e9tarien est disponible.<\/p>\n

\"La<\/p>\n

Nice propose \u00e9galement un restaurant particulier, enti\u00e8rement v\u00e9g\u00e9tarien : \u00ab\u00a0Racines<\/strong>\u00a0\u00bb (3 rue Cl\u00e9ment-Roassal, une \u00e9toile), de Bruno Cirino. Le menu est tr\u00e8s abordable et compos\u00e9 uniquement de fruits et l\u00e9gumes biologiques locaux ou cultiv\u00e9s directement par les propri\u00e9taires. Les produits typiques de la M\u00e9diterran\u00e9e, comme l’ail, l’huile d’olive et le basilic, sont mis en valeur. Ce restaurant de l’imposant \u00ab\u00a0Le Negresco<\/strong>,\u00a0\u00bb un prestigieux h\u00f4tel en bord de mer ni\u00e7ois, est dirig\u00e9 par la chef normande Virginie Basselot, \u00ab\u00a0Meilleur Ouvrier de France<\/strong>\u00a0\u00bb en 2015.
